One came from the Left Twix company, and the other came from the Right Twix company.

It's one of my favorite Mexican dishes, and it's how I judge a new Mexican restaurant... if they make carnitas well, everything else is likely great also.

Yeah, good system. I've been spoiled. A very good friend married a lady from Guadalahara Mexico, I got spoiled on home made carnitas till they moved out of the area.

Porterhouse please, at least 2.5 inches thick, sous vide to 112F then sear properly on the grill, highest heat possible. Final temp should not exceed 123F. I'll PM you the delivery address.

Mmmmm, I'd go with a NY strip, medium rare. Can't say I've ever had it cooked via Sous vide before. I'd give that a shot!
