For example, i had our primary DNS server service stop responding. While i fixed that the company was still able to operate with the machines going to the secondary server. The end users were not even aware that something went down.
Same if AD ever went down. I guess its a personal preference, if i have the resources i elect to do it.
The argument that @scottalanmiller gave is that
a) you don't need AD to log in, per se
b) you can have the VM back up in a few minutes, if it's just doing AD/DNS/DHCP.
You could also replicate DNS/DHCP to other servers, and just leave the AD on one.

Which I've done that, but where on the syslog VM would I actually see the logs being created? What should I modify in the /var/lib/syslog.conf file on XenServer?
When I did that, I forwarded them to a VM running Splunk, and it showed right up.

Well, I DCPROMOed the one physical DC last night. Nothing seems to have burned down.
I was having some DNS issues, but I think it was due to the fact that my machine was pointing to the demoted DC (which obviously had the DNS role installed) and it had been gutted by DCPROMO. I removed the role and everything seems OK thus far.
Though very few users are here. I'll feel better by like 10AM.
