It's more of a cultural shift than anything. Impossible and Beyond made it "cool" to feed vegetarians where before restaurants seemed to prefer losing money over keeping us as clients.
Loosing money. I wouldn't call it that - I would call it not making the most money. But they can't loose something they never had, i.e. your money.

And if they are lucky, this will bring enough scale to drive down production costs.
That's the hope. Both are ramping up to such a degree that once the suppliers are ready and the factories are running, it probably will. The demand is just crazy right now.
I'm currently not sure if I care about the tastes like meat issue - or simply more a flavor - or rather lack there of in vegetarians meals I have generally had. It's likely mostly caused by the chefs not using spices versus a lack of meat.
The typical Qdoba vegetarian version of 3 cheese nachos I had yesterday simply replaces grilled green/red peppers and onions for the meat... but there is very little seasoning if any in those veggies... compared to the impossible stuff - which was very noticeably spiced.

In finance and investing, that is 100% what "losing money" is. It's the lose of potential. Loss of opportunity. Think like an investor, not a consumer.

I think so. It gave me that "sense of eating meat" and I don't like that. It doesn't freak me out, I just never enjoyed it, even back when I ate meat. The texture is great (for me), and the overall quality, weight, etc. But something about it is oddly too meat-like for my maximum enjoyment. But to be fair, most things aren't "enough like meat" and don't make good burgers. So it is hardly a failing. It just doesn't hit the right spot on the spectrum for my to be ideal.

I wanted breadpudding, but they were sold out.
I think the cheesecake likely would have been better than the creme brulee.

The creme brulee was awesome. Don't let him fool you. He is still mad that he didn't get the bread budding he wanted.
I like cheesecake more than creme brulee, so I likely would have said it was better had I had one. But I didn't want something that heavy at 11pm.
