Maybe we can get a ML Minecraft server setup? Assuming it's a shared world, it might be the push I need to dedicate some real time to it.

The Developer 3 option wouldn't be bad for this as long as you aren't using too many mods. You may be able to squeeze it on the Developer 2 option but that would be cutting it close. It really depends on how many users you have running. My private Minecraft server, which is heavily modded, runs at ~4GB of RAM with just me on, it balloons to ~6GB when I have 5-6 people on.

Awesome to hear you guys talking about Minecraft Servers. I have a MineCraft PE server running in a VM for my daughter to play with her friend who moved to Japan.
Just creative mode and no mods right now because from what I have read, the PE server has issues in Survival mode.

It's currently undergoing some changes, as a server cannot realistically be run with more than a few people without any plugins. I'll get right on working on it more, though!
