If you want to learn CRM basics and not a specific system, SugarCRM is very popular and is free and open source. You can install it on a Linux VM quite easily. Or you can install it to a system like A Small Orange with a single click. Getting access to a common CRM to play with it would be pretty easy. Then you can say that you have deployed it as well.

We have our own inhouse CRM/ERP as well as Microsoft Great Plains.

Actually on a call to replace our CRM right now because MS CRM is not functioning well.

JIRA is not a CRM, it is a project management system for tracking software development.

All Atlassian products are for software developers. They exclusively make development software.

I read it last time @Ambarishrh is working with his share point farm. -
In all of these cases, best thing to do is get a book, fire up a VM and start playing. Sharepoint is huge to learn and takes a lot of time and effort.

Azure has an out of the box SugarCRM in the Web App gallery
