@rojoloco My favorite is the Old Fashioned with Knob Creek. I keep trying different variations. If you don't mind - What is your "recipe"? I have tried with just the bourbon, added a dash of water, club soda, orange bitters, regular bitters, etc. Still can't get it like one I've had in my favorite restaurant. I'm still trying though.

This was my first attempt at homemade (pretty good, not great. A friend made me one on saturday that was excellent, should have paid more attention) .
I muddled an orange slice with a bit of simple syrup (can also use a demarara sugar cube) and the bitters (regular and orange). Take out the orange slice, remove the pulp, rind goes back in the glass. Add a large ice cube, bourbon, stir, add a splash of club soda, then garnish with an orange slice and a maraschino cherry. I'll definitely be paying more attention next time I order one.

I've not had real arak, would like to try. I love anise alcohol. It's one of my favourites.

But arak is normally only 100 proof, definitely a straight drinking strength. Our tsuica in Romania is 130 proof and you would never mix that with anything. It would dilute what little plum flavour is left.

Mention arak around some people though and they will be quick to tell you of all the dangers of arak. You might hear “it will make you go blind” or “it killed a friend of my friend”, among many other stories. To be fair, these aren’t just rumors. A few years back, over 25 people died on Bali from a single batch of arak. The scary part was this was the type that was regulated, taxed and sold in stores, not the traditional kind the Balinese drink.

100 proof, not 100% proof. You copied what I said incorrectly. 100 proof is 50% alcohol. 200 proof is 100% alcohol.
