Central point AV and FDE

Sophos is definitely the big player in that space. A top option. I believe that Symantec is another choice. Not too many vendors offer both of these features, you will have very few options.

Is it possible to consolidate TOO much? Is it the correct approach to put all of the management tools into one single application? Or is it better to have two separate applications for the AV and FDE tasks?

Could go either way. Over consolidation can create limited choices which, in turn, means you pay premiums as well as face unnecessarily lock in. It's a little like only sourcing locally - by adding an artificial constraint you remove the best options from consideration and increase your price as you are a captured audience.
But consolidating can be good too. Makes support easier.

As far as I know we don't have anything that can help. I'll double-check to see if we have any plans in that direction.

I checked with Symantec and they did not have a product for this either.

I think TrendMicro has a FDE solution & AV if I remember right. Both Centrally managed

I would definitely prefer working with Sophos over TrendMicro anyday.
