Actually, XO doesn't yet offer that option. See https://github.com/vatesfr/xo-web/issues/808.

Not sure. Was told that they would work fine, but would exhibit the known issue in OMSA.
Received the updated quote with R620 instead of R720, which came in about $600 less per server. Same basic specs expect for a drop in memory from 192GB to 128GB.

There's a difference between backing up the entire boot partition vs. Creating a backup of the metadata then when you have a problem reinstalling xenserver on to a new memory stick and then restoring the metadata to that from the backup.
Agreed... which is why I would hope that XO will eventually offer this as a backup / restore option.
What version of XO? Make sure you are running a recent version as there have been some updates to this code recently.
Also, open a PuTTY window and connect to your XO host. Then run the following command to observe the XO log in realtime: journalctl -u xo-server -f -n 50
Now try connecting to the SMB share via XO and watch for any meaningful output in the logs.
Have you tried excluding the SW directories from backing up with SP?

Looking for alternatives to replace my existing Untangle install.

Sorry, but that's not the way it works. You have to pay the employee for the hours worked. Then you counsel / discipline per the HR policy.
Not paying the employee can lead to much larger issues with the DoL.
