Recipe: Smoked Eggs

This one is pretty easy and unbelievably delicious. I like to use Gruyere, cheddar, Manchego, and/or gouda cheeses. A little drizzle of maple syrup before they go on the smoker is also lovely.
Smoked Eggs (adapted from Steve Raichlen’s recipe)
12 eggs
5 slices of bacon, cooked and chopped
Shredded cheese(s)
Chopped fresh chives (optional)
Hard cook the eggs for 11-12 minutes, then cool in an ice bath until they can be handled
Peel the eggs carefully, then slice in half lengthwise and place on a perforated pan
Top each egg with bacon and cheese(s)
Place a disposable foil pan full of ice on the smoker grate below where the eggs will be
Preheat smoker to 225F (or lower), place the eggs over the ice, and smoke for 1-2 hours
Sprinkle with chopped chives (if using) and serve

The eggs in these pics had gruyere, manchego, and fresh thyme.

The only thing I would fix is the ratio issue. 12 eggs and only 5 slices of bacon?

That's actually a baseline guess. I had much bacon, then ate some while prepping this, so you're right. Moar bacon. Maybe just cut each bacon slice into quarters, then add said slab on top of the egg, then cheese it, etc.

And don't forget the extra to be eaten during the preparation stage! So then we're at what, 15-20 slices?
