If they did, they would have to drop them down again. Their ability to scale is much greater than most companies'.
True, but they do make silly moves sometimes. I cannot see why people would stay with G Suite when 365 has better online editors. I don't think Google have changed or added more features to sheets and docs since they launched it, doesn't seem like they had when I last used them anyway.

And not add bad things on top of it. A bad theme or plugin is part of the code and going to break things.
We very carefully only use a few, tested, trusted, maintained plugins. Gotta keep it lean.
That top of his is defiantly looking outdated lol..

The way I see it is, if a company employs you to do a job then they should provide the tools to be able to do that job, apart from certain cases when your self employed etc. Sounds like a bit of an ass of a company.

Have you looked in /var/logs? might be worth looking to see how they have managed to get in. otherwise you could setup another PI-Hole and the same thing could happen. Did you use a secure passwords for SSH and the login page? no dictionary passwords?
