Unfortunately downloading the image from ubuntu was too slow, would have taken at least 5h according to the speed it had. Maybe coronavirus restriction somewhere...or a local mirror problem. Can't pick the mirror/location from ubuntu website...
Bittorrent came to the rescue though. Took exactly 4 minutes.

You can download ISOs with Microsoft's Media Creation Tool (MCT).
But some ISOs like Windows 10 Enterprise aren't available with the GUI but can be downloaded if you invoke it over the command line.

Before downloading it will ask for a valid license key.

BTDT. I would go with two 32GB.
The future is uncertain and it's much easier to just get what you might need right now. If you can imagine needing 40 GB I'd do 2x32GB right away. Then you have optimum performance and the same memory on both.

If you can't change the software on the server, your only option is to speed up the client.
Either you need to replace the hardware or use other software.

But different length patch cables make a big difference. Same color unless it's color coded for some reason.

I'd probably forgo the horizontal cable management and go directly from patch panel to switch. Perhaps even move them together. If you have vlans, reconfigure the switch so you cable it neatly.

When using community supported distros for servers it seems like many favor CentOS and Fedora and I thinking maybe I'm missing out.

Just guessing but I would take a look a the services for Remote Desktop and see what startup configuration they have and under what credentials they are running.
I suspect that when you log in certain services are started that should have been running before that.
Also do a bare installation without joining a domain so you have a fresh install to reference.
I'd also check the "allow remote desktop from any version" option.
Also if I wanted to have this project done, I wouldn't waste my time trying to make some kind of program specification. Or make up answers for every possible question that the might come up. Or even figure out what hardware, software, database, programming language etc to use.
Use the developers expertise instead. Part of every project is to figure out what the goal, scope and expectations are and also potential problems and alternative solutions. The developer should be able to ask what he/she needs to know to accomplish your goals with the project. And come up with a solution for you.

It's udev that has a rule with eth0 and the old mac address.
Don't know what distro you're running but try looking in /etc/udev/rules.d/70-persistent-net.rules.
Delete the line that has NAME="eth0" in it. And change the line with NAME="eth1" to eth0.
And then you have to swap back eth1 to eth0 in your network settings.
