Going from Exchange 2010 no Sp to SP3 - concerns?

As the title says I need to upgrade from no SPs to SP3. Anyone else do this?
This is a single server Exchange setup, no DAG. All roles on one box.

Not aware of any concerns with that upgrade path, but I could easily have missed that.

How safe is rolling back Exchange? I know pre 2012 you don't do that to AD servers, haven't read anything on Exchange.

As long as you are standalone you should always be able to roll back just fine. It is clusters that cannot be rolled back.

I have done it once, But that was an offline snapshot made when the VM was shut down, so there were no repercussions.
My understanding of VMWare is it works as long as all the tools are up to date, but I would not take my own word for it. In your situation, I would shut down the server and make a snapshot. then do the upgrade with the inbound email disabled at the firewall so the external spam filter caches everything. That of course assumes an external caching spam filter.

I do have a hosted spam filter (appriver).
Why would the offline snapshot be different than an online?

Because the database (exchange store) is in a normal shutdown state and not being wrote to.

Snapshots don't make open files be closed. Databases keep their files open and snapshots of any system like this are inconsistent, potentially, and unsafe. Only a database aware snapshot is useful for databases. And basically none are.
This is a higher level issue that is far worse when you use SAN level snapshots. They lack visibility not only to open files but to the quiescence state of the entire file system too.
