What email do you want to have? Why not run one VM with Odoo and one with Mailcow or Zimbra and voila, done. Two easy systems that don't mess with each other, no panel problems to deal with.
Oh ok, so your suggestion is:
Server 1: Odoo - erp and website
Server 2: Email server - I need the easiest one to manageCorrect. Having both on the same VM guarantees that you have to manage more than you need to with them separate, and potentially introducing any number of application conflicts. It is not necessarily like having two WordPress sites on one Apache server. It might be, but very unlikely. Most likely they will mess with each other in bad ways or having conflicting requirements.
So two VMs. MailCow is probably the easiest email, but that's going by other's recommendations. We use Zimbra, and it isn't bad. Easier than cPanel at least

Do you people have any other suggestions, while running servers on cloud for the first time? might be about security or something else? -
Make sure you use current Ubuntu, don't opt for something old like most people do. Somehow people get this idea that Ubuntu should be not kept up to date, some bizarre carry over from problems in the Windows world.

In fact, it is requirement of running odoo erp for someone else, but they are willing to build and run their company website as well with erp, so from there idea came out, what if we run email server as well in pack and above are suggestions.

Do you people have any other suggestions, while running servers on cloud for the first time? might be about security or something else?You treat the security the same for any public server, being cloud makes no difference. If you not sure on how to implement server hardening I would get a managed service.

This was kinda where I was going with my Email question - i.e. is this a greenfield company? never had email?

What does this part mean? Like their public company site?
I think he means that odoo can host your website in its infra. To let you keep it up with contents. Like a reserved area for customers to check for their docs (invoices, ...)

That has been the worst install of a CRM I have ever done even in Ubuntu. Heavily do not recommend it.
