Just deployed new CentOS7 VM and fully updated (about 177 updates from ISO I had on hand) in the time it took for Windows Server 2016 to restart due to updates.

You might consider the Amplifi line. I've not used one but they get good reviews, are more home user focused, and can be configured from a mobile app.

Every so often, I'll delete them from my phone, then sort them out in OneDrive.
Nextcloud has a feature to auto-upload pictures from iOS and Android devices, but I have never used it yet. I should probably set that up and test it out.
I've been doing this from my Android phone now ever since I setup Nextcloud a few months ago. No issues thus far. Have it set to backup once I'm connected to wifi.

Me. I tried to set the minimum password length to 16 at a client with Server 2008 R2 and found out 14 was the largest I could set it to.
I found it odd this was a Windows 10 update and not a Server or Group Policy definition update. Maybe the latest 1803 GP enable this, and they're just having to do an update to pre-1803 systems to play along? I'll have to look more into it tomorrow.

Did you enable MFA after that on the accounts?
We looked into MFA before this ever happened, but it doesn't seem to work well since we have Office 365 through GoDaddy. The authentication seems to run through GoDaddy first so it makes it act fairly wonky. I'm now testing a "pure" Office 365 account and going to enable MFA there to confirm my suspicions that GoDaddy is where my issues lie.
Oh okay, this account is fully Office 365.
Yeah we ended up creating some new rules as a result and learned a whole lot about all the different Office 365 relevant portals to capture logs, etc that we weren't fully aware of prior. It's really quite scattered at the moment and the ability to setup alerting is pretty weak, especially on the Azure side. Now we're having to manually check the "Users Flagged for Risk" and "Risky Sign Ins" weekly to help identify any fishy (phishy?) business.

I've never cared for people who do the cumulative years experience. 5 guys with 5 years experience = 25 cumulative years experience. Seems deceptive.
With that being said, I don't see the fuss here. If I were to start a new business, I would say the amount of years experience I had doing the work I was doing which is exactly what they seem to be doing. In this case I know that the business has been running for 13 years but they have an additional 12 years experience on top of that.

Don't bother. Do a clean vanilla install and then just go get the drivers you need specific to your device.
If you had Windows 10 on here before, the install should validate automatically.

That all looks accurate, assuming the underlying info is accurate. Double check your Translated Destinated IP info is accurate and service group info. Also, the wizard generally does this for you but ensure that these new rules have a higher priority than any previous rules that were there. Finally, ensure that the check box is set to "Enabled" under the Firewall > Access Rules and Network > NAT Policies.

The R320 is newer, but what I was trying to decide how that benefits me for this specific workload. Also, much less available drives. So I am also leaning towards the R510.
I would think this only benefits you from a support standpoint. For instance, VMware 6.5 doesn't support the R710 and R510 but does support the R320. I know you're using Hyper-V and this doesn't apply, but that's the only reason I would care about the newer generation. That and newer processors which may give greater performance per core.

How much storage will this backup server require? Only 4-6 drive slots could be limiting.
The R710 and R510 look identical in specs, therefore I might would opt for the R510 with the more drive slots.

Do you guys go beyond the SPF records and also implement DKIM or DMARC? I've looked into these briefly but not much. DKIM looks fairly straightforward with Office 365.
