UEFI vs BIOS harkins back to FAT16 vs FAT32

I've spent the last few hours trying to remember how to boot a brand new laptop from a USB stick to install Windows 8.1 from scratch.
FYI for those that don't know, you can't boot UEFI from an NTFS partition - it must be Fat32.
I remember using cloning tools and fixit tools back during the transition from FAT16 to FAT32 and if you didn't know which one you were on you might think you have a virus or that the partition died, etc.
These transitions definitely make life interesting.
