Testing server for errors or performance issue?

I have 2 servers configured with fail-over Hyper-V with Windows Server 2012 R2. Before I go live with the server I want to make sure that everything is setup correctly. The servers will run 2 VM. Both are file server.
What would you be looking for if you are deploying new servers? Do you use some kind of benchmark programs? Any thoughts will helpThanks!!

What kind of testing or benchmarks are you thinking would best apply? Maybe just some user acceptance testing and attempts to stress the servers yourself to see how they perform?

@StrongBad I already did some file transfer testing and it seem fine. I just want to know what kind of testing do other admins would do to make sure the server is ready for deploy.

I never do anything formal. In the setup process a lot of things get stressed anyway. Normally I am using the server quite a bit before turning it over to users so I do not tend to worry about further testing.
Especially if you are dealing with a virtualized platform, it's been doing a lot of things before this point.
