Neither, I run openSUSE on my server
The default how-to was made on Ubuntu LTS but clearly, it works at least on openSUSE just fine, too. If CentOS has any issues, let me know how to adjust the manual on https://nextcloud.com/collaboraonline (or do a pull request, we have our website entirely in github: github.com/nextcloud/nextcloud.com )

Cool. I'm the same way generally. Although I've not seen stability issues on Tumbleweed, but the idea still worries me a little.

EXACTLY the same here, I haven't had issues but the idea is just disconcerting...

Rolling distros are kind of new, but I've seen some compelling discussions as to why they are the future for a lot of use cases.
