I don't think you should care, really -- as long as your stuff is working how you want it to.
I prefer X11 still because of support for things like VNC and such. When Wayland gets that ironed out good, I may consider switching again.

If I'm honest, that's the way I feel about Wayland. It's new, it's exciting, but one of the main things I've come to expect from any computing platform is remote control. AFAIK, Even VNC doesn't work on Wayland yet.
I think they're getting closer though. Gnome has a Remote Desktop thing you can activate under Sharing, and it actually works half decently -- and works with a regular RDP client. The problem is that you have to be logged in, and can't let the screen lock. It works more akin to VNC rather than along the lines of Terminal Services.

The info below is from Debian but should be the same under Ubuntu.
GDM (GNOME Display Manager) will automatically use Wayland when supported, except when using the proprietary NVIDIA driver, in which case it will fall back to X11 due to instability.
To use the X11 backend by default, uncomment the
WaylandEnable=false
line in the/etc/gdm3/daemon.conf

I was under the impression that if you install the NVidia drivers, that you would wind up with X11 and not Wayland.
