      I tried using remote-viewer to allow my VM to be used on multiple displays. The command works as expected and launches a remote display, but I am unable to select any other displays.

      I also tried the method of adding an additional QXL video display. This allowed me to select another display when using remote-viewer , but it got stuck on connecting and never connected.

        Have you added a second display to the VM?

                In Remote Viewer, click View > Displays > check Monitor 1/2/3 etc, after setting up like below.
