Disappointing to see Thor go through all the adversity he went through in his movies and other Avengers movies, only to be portrayed as some coward in this last movie.
Well for starter he was a spoiler little brat who was sent away by his father without his hammer and powers. Lost his mother. Lost his father, Lost an eye. Hammer destroyed and Asgard and most of his people destroyed. More asgardians died, Loki died, Heimdall died, got his ass handled by Thanos the first time they met. Failed at killing him before the snap.
I don't know about you but that would make anyone depressed.
But he's not human...regardless, great point.

Captain America being able to pick up Thor's hammer
In Avengers AofU, he was able to move it. From the comics, the side of the hammer carries the inscription "Whosoever holds this hammer, if he be worthy, shall possess the power of Thor." In Endgame, his worthiness was absolute going against Thanos.

I guess since he made the device, he has the ability to take the stones out, I get that, however, Tony and Thanos struggled for all of 5 seconds...The stones just poofed into Tony's glove?
Two words, Nano Technology. His gauntlet and his suit is built with nano tech which is why he can move the stones.

I'm generally fine with fan service, but that was such a jarring moment in the narrative flow. To go from "we're fighting for our lives against a powerful enemy that has all of us engaged" to "let's get every single female (many of whom didn't even have more than one line if any at all) into a single camera shot to pose for the audience" was more than my suspended disbelief could take.

Speaking of Tony, Iron Man, couldn't the Hulk put the glove on and heal Tony? Or perhaps rewind time like Thanos did when he killed Jarvis, he could have prevented his death then.
Hulk was physically and mentally weak from the snap he did to bring everyone who snapped back. Not sure gauntlet was even available to try. Can't rewind time because that will also bring back thanos and his army.

I don't apparently know any of this lore either - I mostly know the movies, and what I can remember from the 80's cartoons - I've never like comicbooks themselves, just not my thing... so I don't know much of this lore.

I didn't realize Hulk was that bad, especially since he was lifting hundreds of thousands of pounds of concrete after they were fired on

You do not need to know anything outside of the movies if you pay attention to all of them. I have not read Marvel comics since the 90's. I was also more of an X-Men reader than Avengers.

I suppose it would be boring if Thor just beheads Thanos a second time, but I think I'd prefer it, then they could just be shown fighting that massive army.
From the first Iron Man movie that ended up kicking off a 10 year journey. And with Avengers, Iron Man 3, AofU, Infinity War and Endgame. It was always about Thanos and Tony Stark. At least that's how I see it.
