Consult or work for an established company?

I added some info. I meant consulting by starting up your own company. Not just some schmuck with no business license, etc.

Neither?
Never form your own company! Okay, someone has to, but 99% of people who want to consult should not be starting their own firm. Almost no one starting their own business should do so. It hurts the market and the individuals. It's bad for everyone. Nearly all MSPs fail, but every one that tries ends up making the market worse for those that remain.

Can't overstate this. Even outside of IT, essentially no one should ever work without at least forming an LLC. I know a guy who is a personal trainer.... LLC. If you get paid, it should be through a company.

Established, of those two. Here is the bottom line....
- If your goal is to be a businessman and you enjoy business, not IT, then start your own business (and almost certainly not an MSP, MSP is a tough business, you'll make way more doing something else) ...
- If your goal is to work in IT or consult, join a consulting firm so that you can work in IT. If you start your own business, you don't really get to work in IT, you have to focus on business.

The way you worded your question it's almost as if you think that if you have your own company you won't have regular pay. As @JaredBusch said if you form a company and write yourself a paycheck every week, you do have regular pay.
Once you have a certain number of customers, you actually have more job security than with a single employer. If you lose one customer, you may lose 10% of your salary, but not everything.
