I had never made a RJ11 cable connector using the flex cable (normal phone cable), I did a telephone connection using RJ45 JACK connector using Cat5e cable then connected to RJ11 then phone.

Do you mean that you terminated a CAT5 cable in an RJ45 jack and then just plugged in an RJ11? Sure it will work just fine, as long as you hook up the dialtone back in the phone closet to the blue wire (Pins 4 & 5). The RJ11 will be loose and likely to easily be pulled out, but it works just fine.

@JaredBusch Yeap, only 1 pair working.

My point is that is very difficult to me "create" a RJ11 connector using normal telephone cable, it is very flexible and hard to crimp. For me at least.

You called it flex cable, but I have no idea what that means.
The coil cord is not normal phone cable. that is handset cable.

Normal phone cable is simply CAT3 or an untwisted 2 or 4 conductor wire.
