I have a few machines with various Linux distros. I am willing to try something new.

Have him start with an iPhone or equivalent. (I use my iPhone 6S+ & 7+)
There is no need to shoot in 720P, 1080P is the mininum I would consider.
I actually prefer to shoot in 4K, but that's a whole 'nother topic. This is a great app for shooting videos: http://www.filmicpro.com/
These guys have all kinds of lenses/accessories/gadgets, he can start small & grow: https://beastgrip.com/
Use this to "downres" the video from 4k/1080 to YouTube/iPad/AppleTV etc: https://handbrake.fr/
This app works great for Macs: https://www.telestream.net/screenflow/overview.htm -

My son (14) is interested in making and editing videos like the ones he subscribes to on YouTube. He is wanting to learn the editing and capture of audio and video. I have a few USB webcams but do not feel they are sufficient to "learn" with. For those of you that do this type of thing - any recommendations on camera and/or camera with mic? If he wants to learn, I want to have whats necessary.
Any 720p USB camera is fine to start on. The hard part is the editing. I have no idea what is a good software for that.
Exactly. Getting a 4k camera isn't necessary and is complete overkill. I know so many people that have $300 GoPros and never use them. I frequently record with a $30 1080P action cam and most people just assume it is a GoPro because even though there is a quality difference, it certainly isn't 90% like the price difference.

98% of viewers arent gonna give a shit if it is 720 or 4k. Actually most of the times 480 is just fine. It's not like you're with a company and promoting an actual product. Think about the youtube videos that you watch. Do you care about the video quality as long as the content is good?

Yes, I'd say the same even if he was 12.
Chances are he already owns a phone, no need to buy or spend extra $$ -

No man, speak for your self. You don't or won't give a sxxt if it's 480/720 or whatever.
There's a reason people buy hi-res cameras/TVs/displays etc -

There's a reason people buy hi-res cameras/TVs/displays etcI don't discriminate based on video quality and I would almost guarantee no one else would either. If the content is worth watching, I'll watch 480 everyday. I am not going to sit through a 2 hour movie that way, but I dont give a shit if some kid is reviewing a product on youtube on a 5 min video. I am not sure I have ever seen anyone care.

Tagging @MarigabyFrias here as she runs a firm doing this kind of work.

I would not get a 720P camera just because it's like $5 more for 1080p. My very old, very nice 1080p USB camera was only a few bucks more all that time ago than a 720p. You don't need 1080p, I agree. But it's SO cheap.
