That's what my wife had on her first day in the hospital. We had a little Whatsapp discussion about the meal:
Me: Why does your napkin look like an omelet?
She: Actually, the napkin is an omelet...
Me: Has anyone looked funny at you while you used the napkin?

Roast beef and mash. Bought a 3 lb from the local butcher and cooked it for dinner.

I made some Gai Pad Krapow (Thai basil chicken) last night.... Most excellent. I used chicken thighs instead of the ground chicken called for in the recipe, so it wasn't the 10 minute version, but it was spectacular. I also subbed Vietnamese chiles for Thai chiles since the store had no red Thai chiles.
