Camping trip got canceled because much of the N Ga mountains are on fire. We went to the park and hiked to the overlook, and it was so smoky we could barely see the valley below. So we hung out at a friend's farm in Jasper and ate lots of good food and drank all the cider. We also cold smoked about 15 different kinds of cheese, and they had some homemade smoked salmon.
I've closed my year on camping.. Had hoped to go again, but now I don't know if I need to. Like N Ga, part of E Ky is or has been burned. The Red River Gorge area has been hit pretty hard.
Smoked Cheese- I have three block to smoke myself. but I may not get to them this week. I was also going to start some Canadian Bacon, but that may be too late ... oh well.
It's never too late for bacon.
No,.. it isnt' but very well could be for that loin...

A couple of shots of the amazing homemade cold smoker... It's a converted water boiler that used to service the farmhouse. A little welding of found materials, an air pump, and it works perfectly.

The reason he's cooking outside in the snow, aside from the fact that it really is a good time of year for this down here... Chances are, he has no power, and has to use the grill, ha ha.

Used to love doing BBQ's when it was snowing where I used to live - a foot of snow was perfect - can throw all the beer into the snow to keep that at the perfect temperature, matched with amazing hot food...winning!

Roommate is away this weekend. So likely going to be a quiet one for us.

Hopefully I will be maple smoking some homemade Canadian bacon by Sunday. Pink salt is on the way, pork loin is thawed. @MattSpeller or any other Canadian folks here - got a favorite bacon brine recipe you could share?

Yeah, there's gotta be nearly an inch of snow there. Egads!!
That much snow has, and will again, shut down all of N Ga.

Never done bacon - but I'll take one for the team and sample the results.
