It's all encyprted using your iCloud Keychain and HomeKit uses AppleTV as a relay rather than exposing directly. Seriously you don't want lock makers (looking at you kwikset, they made bad locks anyway though) handling the Network security site of it.
Assuming of course the lock makers didn't futz the implementation details, or actually issue updates for any unforseen problems in the future.
Apple verifies them.

I'll keep my door locks dumb, thanks. No reason to have a network connected deadbolt, especially if it only works with crapple stuff.

Indeed
If I decide to automate them (and I likely will) I will do it myself. That's a project I'd have a blast with haha.

Anything not made by Schlage is pretty much on that list. Schlage is the only company that's done one that serious about security in the first place. Hence why their locks are damn expensive.
kwikset kevo can be opened with a screw driver.. The lock core is weak

Installed it (thanks prime Saturday delivery) and it's working great so far.

We have a keypad lock from Schlage.
It works great. So much easier for the kids.

There was one of those on the AirBNB in Austin last year.. it was night until it didn't work the last day. I had no key I had to call the super.

We've had ours for many, many years with nary an issue.

You can put time restrictions and such on PINs/users. Maybe they did that.
I plan on taking the Cylinders out of mine and finding a blank one without a key hole.
